When we used to go camping we always took the pancake mix in the yellow bottle. Shake and pour or something like that. If you cooked your bacon and the pancakes after, so they cooked in a little bit of bacon grease. PHENOMENAL!!!

In all seriousness my family loves breakfast on the Blackstone. It’s great when the kids have friends stay over. I can make dozens and dozens of pancakes in a few minutes for everyone. Eggs, bacon, sausage, burritos are great on them. They also like smash burgers, stir fry, fried rice, quesadillas, sandwiches… it’s so easy.
My favorite part of it is to put the steak on the Traeger until it hits 110-112 internal temp (works best with the ribeye and t-bones from our farm). Crank on the Blackstone as hot as you can before they hit that temp. Slap the steaks down on a pad of butter, and blacken both sides for around 60-70 seconds a time. Perfect medium rare steaks every single time. I get my steaks cut 1-3/8” thick. Lessen the time on the flattop by about 5-10 seconds per quarter inch less of a cut if using store bought thinner cuts.
 
Breakfast. Smash burgers. Chicken fried rice. Cheese steaks. I have a 36”. Took it to Iowa City for game last fall. Made Philly cheese steaks. Fed 30 people in like 20 minutes. Little clean up. Love mine

Breakfast, smash burgers and Philly cheese steaks as some have already mentioned, we also like to make quesadillas on ours. My wife cooks the chorizo for tacos on the griddle, and after she has slow cooked the pork and shredded it for carnitas, she puts it on the griddle for a bit too brown it a little.
 
garlic infused olive oil--1/2 inch layer of cooked rice --crack and egg ontop of rice --some pepper jack cheese ontop of egg--acouple slices of browned andouille sausage ontop of cheese ----grill until bottom of rice is crunchy and yoke is done to preference
 
The lack of clean up is what has been the best part so far.

Besides that fact that cooking on it is easy!

It’s the best part and the worst part. I use mine a lot and I love how fast and easy it is to cook on, but you don’t get to relax, have a drink and listen to music like you do with a traditional grill.

Funny you mention that, I tossed some tunes on the other day while on the Blackstone and I don't think I even got through one song before I was basically done cooking.

What's a "griddle" and do I need one?

My only understanding of a griddle comes from being a short order cook in my teens. Good times!

Thats pretty much it. I grilled thousands and thousands of burgers at Mickie Ds as a wayward teen. Somehow it did not ruin my love of cooking
 
My wife loves when I fry ramen noodles on it with chicken or flank steak and spice them up to our taste. I’ve done smash burgers. Other than that I mostly make a lot of grilled breakfast sandwiches like every other day. Ham, bacon, eggs, cheese. Basic stuff.

Philly's
Fajitas
Burgers
Brussel Sprouts
Hash Browns
Bacon

Couple things I don't like...

Hot Dog/Sausages
Corn on the Cob
 
Right now...I would rank it like this.

1. Griddle
2. Air Fryer
3. Microwave
4. Oven
5. Smoker
6. Grill
1. Smoker (Nothing beats slow cooked smoked meats)
2. Griddle (Best for all non smokable items except Hot Dogs, Sausages and Corn on the Cob
3. Grill (Best for Hot Dogs, Sausages and Corn on the Cob
4. Oven (Best in the winter)

The other two are also completely unnecessary

Steak, Philly's, Fried rice using Jasmine rice pre-cooked and refrigerated, Hashbrown Eggs and Ham Burritos, Smash burgers with a good amount of butter, steaks are awesome on the Blackstone, Salmon...
 
Has anyone mentioned Birria tacos? Ridiculous in their goodness.



I don’t have the flat top yet, but this may just push me over the edge. Every day can be taco Tuesday.
Those look fantastic, but I will be buying those at a restaurant with TLC required there. The mess I would make trying to do those would piss my girl off I'd think
