Yeah I remember a good cafe at the Aurora exit but I don't think it's there anymore.

Not sure there's really much of anything right on I-80 other than fast food chains. Get a few miles off the beaten path and you might have better luck.

I know this isn't on the interstate but Virginia's Cafe on corn husker highway in Lincoln is good breakfast 247

Cut back west 10-15 minutes of Kearney and hit up Apple Barrel at the Odessa truck stop.
