I know someone out here knows the answer to this question.
We have always bought "cage free" eggs from the grocery store, but about two months ago found a source close to our home for farm fresh eggs and have been getting those.
Love the flavor and richness of the yolk, but why are the yolks so much more fragile than those bought from the store? Is it the kind of chicken? I don't know what kind they are, but almost every yolk breaks no matter how careful you are, and they don't "stand up" like those bought from the store.
Thoughts?
