Colorado suggestions

Going to be taking a quick vacation leave Thursday morning back Sunday night middle of July 14-17. Live in central nebraska. Right now thinking about spending a day in Fort Collins (7 hour drive) and doing brewery tours and spend the night. Head to Denver next day til Sunday then head back. Any insights on must see things, restaurants, tips etc. It will just be me and the gf. TIA
